Day 13 of 21

01fdc01b1d29f0bf54d74396e68ac1fd1ececbcc8fToday was the day all of my hard work over the past 7 months (my official start of clean eating and BeachBody workouts) was going to pay off! I had gone from a size 14 to an easy size 6, and I was actually looking forward to shopping with my mom and sister for the first time in my life. In the past I could barely fit into clothes at mainstream clothing stores, or if they had my size, the clothes were clearly not designed for someone of my height and weight. I also hated buying shorts, dresses or skirts because my thighs would rub together and be so painful in the heat. But with the help of 21 Day Fix, T25, P90 and PiYo I had lost 35 pounds and sculpted my legs so that I could finally wear a pair of short shorts!!!!

I won’t thoroughly review my workout today because I did a hasty Yoga Fix Extreme in the morning before shopping and really struggled on focusing on the moves. Yes, I was stretched out by the end, and this time I used my own music; but I still really struggled to even get into position for a lot of the moves and the modified move didn’t really push me. I swapped Yoga for Dirty 30 Extreme, because I didn’t have time for a shower in the morning and my husband refuses to workout before 9 am and since he doesn’t “do” Yoga, I figured we could do Dirty 30 together on Sunday.

In addition, it was haircut day for Zoey and I, we were off the salon and groomer respectively for a well deserved trim. If you have seen our photos over the past 13 days she looked like an overgrown muppet and I looked like I was growing a fine mullet….After my breakfast and haircut we headed to King of Prussia for a day of shopping and fun! My sister and mom have been following 21 Day Fix eating and doing at home workouts (21 Day Fix, P90, PiYo and Tai Cheng) and have both toned their bodies and lost weight. In the past shopping would make us all pretty grumpy and we would go out for a terrible meal at the mall, but this time we were inspired and excited by the way clothes were fitting us and went to Bahama Breeze for a healthy meal to keep up our results. 01fd716fc8b0c2650c159226f143b5307795d1f8e0

My main goal was to find a dress for formal night on the cruise, I had gone shopping with my best friend and fellow coach Carly a couple of weeks ago for shorts and t-shirts but wanted to wait on my final results to pick a dress. I loved this pink colored one on the left, but agreed that I probably wouldn’t have much use for it outside the cruise. We were having a fun time texting our cousin with some of the more unique finds…yes that dress in the middle is one piece oddly….it is connected in the back! My final choice from the day was the purple dress on the right. I felt it was classic, appropriate for any future friend’s weddings and showed off the progress in my stomach. I was inspired and ready to kick butt on my remaining 8 days of 21 Day Fix Extreme. Here is what I ate during my day out, it wasn’t perfect but I think I did a good job of sticking to the plan as closely as possible:

  • 1 Yellow Serving Steel Cut Oats
  • 1 Purple Frozen Mixed Berries
  • 2 Scrambled Eggs

Snack 1:

  • Chocolate Shakeology
  • Frozen Strawberries

Lunch: After shopping for an hour we headed to Bahama Breeze for lunch, they had so many great fix approved meals, but I opted for one of their fish of the day options. We also started with some delicious Hummus and Vegetables as an appetizer. I ate all of my fish but skipped some of the potatoes to keep my meal to two yellows, two reds and 1 green and 3 tsp.0172cffc5f168ff1fa7db9d2a62d95701743540489

  • Wood Grilled Mahi Mahi with Chimichurri
  • Steamed Broccoli
  • Mashed Cinnamon Sweet Potatos
  • Hummus
  • Carrots and Celery and Peppers

Snack 2: I couldn’t find a good healthy snack for the day and was still full from lunch. I opted to skip this meal in order to conserve containers for dinner. We didn’t have a plan so I wanted to leave as many options open as possible.

Dinner: We had so much fun shopping we actually forgot to stop anywhere and make a dinner reservation. By the time we got to the restaurants in the mall, every place had over a two hour wait. We headed to the food court….I was really nervous but when I found a make your own salad place, I knew I would be fine. 018426f7f6323699ba5b8605b069e3623e85335dc6I loaded my salad up with:

  • Spring Mix
  • Grilled Chicken (yes over on my reds for the day but I was tired and needed it!)
  • Onion
  • Mushrooms
  • Green Peppers
  • Oil and Vinegar for Dressing on the side

Overall I would call today a shopping success. We were all able to find what we were looking for at the mall. No one broke down in tears…that’s usually my job…and we actually closed down a store finding mom the perfect bathing suit! I don’t think we have ever shopped that long in our lives. Bonus: I had over 15,000 steps on my fitbit Charge HR by the end of the trip.

Day 12 of 21

018b4f18079935b33d60a0021170611e0ec6df6b07Today I had a major breakthrough in starting to see definition in my abs, the past 11 days of clean eating (no cheats!) and intense workouts is really paying off. I had my husband take a quick picture before our workout to show you the progress (see below). I was headed home to do some last minute cruise shopping with my mom and sister, so I knew I had a long car ride home after work. I was fortunate to have a second telework day, so I got to enjoy being home with my husband and dogs and being spoiled rotten; my husband prepares all my food while I am working in the office! We were also able to knock out Cardio Fix Extreme during my lunch break, which may have been a poor choice in hindsight! I had major butt cramps the whole 3 hour drive to my parents house, thanks Autumn!!!!!! In fact my booty and my thighs are where I am seeing major changes, this is huge for me since I usually avoided wearing skirts and dresses on vacation due to thigh rubbing and I don’t think this will be an issue for this vacation. Here we go day 12, don’t gloss over breakfast this is a major discovery of delicious Fix approved fast breakfast.

Breakfast: As I mentioned above, my husband lovingly makes my food when I am home teleworking. I passed him my trusty food journal and waited for my breakfast to be delivered. My eyes almost popped out of my head when I saw my oatmeal, it filled the entire bowl!!! So finally I asked him how much oatmeal was in it, turns out he used tw0115c6ef1f48aae1d527122b48410d45867d7f7522o yellows worth of oatmeal, but had discovered the most wonderful and filling meal (great if you know you won’t be able to fit in a morning snack).

  • 2 Yellow Servings Oatmeal Prepared with water
  • 1 Purple Frozen Mixed Berries (heated in the microwave for one minute and then mixed into oatmeal above)
  • 2 Eggs Scrambled with Herbamare (if you haven’t tasted this seasoned sea salt, it is worth a try)

Snack 1: I was so stuffed from breakfast but I wanted the extra energy boost from my Shakeology for my workout. I only made it through half of my shake before sticking it in the freezer for a great post workout snack.

  • Vanilla Shakeology
  • Frozen Antioxidant Fruit Blend
  • 2 tsp Peanut Butter

01525b7ce5e102e2152ea0df7dda737c8dae87dab3Lunch: I finished off my Shakeology and had a serving of leftover 21 Day Fix Extreme Shakeology and a delicious ripe Pear (Pears are amazing post workout snacks because the high water content they have makes them very refreshing). I had the cutest beggar during my meal, seriously this puppy melts my heart!

Snack 2:

  • Buffalo Hummus (homemade by my amazing husband)
  • Cherry Tomatoes

Dinner: I am so grateful and blessed that my family is also following the 21 Day Fix nutrition 01dc72998ac80f47b6b02feb8c367e837e5e95090eplan. I know when I go home to visit that the meals will follow the plan, the containers will be figured out for me and it will be delicious! It also helps to have my mother and sister to swap recipes with. My mom knew I was craving red meat, so she made this amazing Texas Beef Brisket (she does a lot of fat trimming to make sure the brisket is leaner, it probably isn’t a perfect fit to the plan, but it sure is tasty and worth a little treat).

Workout: Today we fit our workout in over my lunch break. Cardio Fix Extreme is challenging but if you push yourself, you will see amazing results. Every time I felt like quitting, I kept reminding myself, you can do anything for one minute! The workout rounds consist of two one minute exercises followed by 30 seconds of pure cardio without weights. This time the 30 seconds of cardio for each round were a relief! My legs were screaming with all of the weighted one minute moves, and it felt good to stretch them out in the pure cardio sections and get my heart rate going. O016bf45bf26003f5df143e5a565777fa9d51d62efbur golden Lexi was crazy with all the hopping around and unfortunately had to be crated at about the ten minute mark for everyone’s safety. She kept attacking my hand weights and rolling them into my foot path and jumping at my husband. She looked so sad in her crate, but loved stretching with us during the cool down. Other than a couple of leg shakeouts, I didn’t skip a single second of the workout! I will be honest my legs are so sore I think I am going to need to take a bath and roll them out before Dirty 30 Extreme tomorrow.  Also not to brag, ok I’m going to brag…..Look at that center line in my abs! It is really starting to show when I am just standing upright. I haven’t been doing the 10 minute ab fix, due to lack of time but even just the normal Extreme workout schedule with proper eating is giving me great progress in my ab definition.

Day 10 of 21

01ab2e7e50ee9b44d7f69682c4889bffb3198b3d9bThis post will be pretty short, a lot of leftovers today and Pilates Fix Extreme was one the schedule again. At this point I was really missing my workout partner; David was insistent that he wanted nothing to do with the resistance bands and Pilates. I couldn’t really blame him since it is my least favorite of the workouts, but it is important for building core muscles and I did not want to skip it. So I laced up my shoes and struggled again with the bands, by the end of the workout my core was on fire! Day 10 was a huge breakthrough of cravings for me, today was the first day I didn’t want to grab chocolate from the office candy jar.

  • Oatmeal
  • 1/2 Orange
  • 2 Hard Boiled Eggs

Snack 1:

  • Shakeology Bar
  • Apple and 1 tsp Peanut Butter

  • Italian Stuffed Pepper (see Recipe)

Snack 2:

  • Vanilla Shakeology blended with Frozen Pineapple
  • Baby Carrots

  • Curried Pork Tenderloin
  • Balsamic Roasted Veggies

Workout: As I mentioned above, today was Pilates Fix Extreme. I still haven’t caved and bought01cde5fd8d15cadf7a6b67dc9d1d883a83451aeb98 the correct resistance band, so I am using 5 pounds more than the recommended resistance. I did improve this week and only struggled with the moves on my stomach (eg. Superman). Since I had completed T25 beta, I had done these exercises using light weights. So I put down the band and picked up my 3 pound weights to complete the exercises instead. I was finally able to complete the entire workout without cursing out Autumn and her dang resistance band! My biggest issue was my little furry friend Zoey….during the hundreds she started swatting at and then standing on the resistance band. I think it’s the two count breathing in and out that makes her so feisty. During the breaks I would toss her dragon to keep her entertained. After the workout we snuggled up on the couch with Lexi to catch up on Parks and Recreation. My weight has stayed the same, down 3 pounds from week 1. I am pretty happy with those results, I tend to lose a bulk of my weight for the round during the first and third weeks of 21 Day Fix. I am really looking forward to workout out with David again tomorrow.

Chocolate Pudding (21 Day Fix Approved)

01b944b2064eae6da1fec154b9b2ee4edecb883b30 So anyone that knows me, knows I have a major major sweet tooth! Chocolate may be my biggest downfall while eating healthy, so Chocolate Shakeology was a huge breakthrough for me when I started BeachBody workouts. I bought a bag on a whim with my PiYo and decided hey why not, it’s only a couple of bucks more than the program by itself, and if I hate it I can return it and get my money back! I owe my ability to stick to my eating plan to that chocolate shake every afternoon, so when I saw a recipe for Shakeology Pudding in my extreme book, I knew I had to give it a try!

(This post was Inspired by the 21 Day Fix Extreme found on page 72 in Shakeology recipes section)

  • 1 1/2 Scoops Chocolate Shakeology (You could use another whey based protein powder, but I won’t promise it will be as tasty!!)
  • 1 Ripe Banana (cut in 1 inch chunks)
  • 1 Ripe Avocado
  • 1 Cup Unsweetened Almond Milk

  1. Combine all ingredients in blender and blend until smooth.
  2. Separate into 4 bowls and cover and refrigerate for one hour (this is the hardest part, allowing the pudding to sit without being tempted to break into the fridge and shovel it down!)
  3. Enjoy!

If you have never tried Shakeology before it is a wonderful dense and nutritious meal replacement shake. It is full of fiber and probiotics to keep you full and reduce your cravings for sweets. My favorite benefit of drinking Shakeology daily is it keeps my energy levels up and has helped me to reduce my caffeine dependency! Drinking my daily shake and using 30 minute workouts I have lost over 35 pounds and never felt deprived.

7 of 21

012ca56b1ca7cf6b394ee4edb32bf46e8ec21236aaDay 7 and I am down 3 pounds for my first week! I usually have my biggest drop in weight during my first week of a round of 21 Day Fix and I expect 21 Day Fix Extreme to follow suit. The biggest changes I see in my body after one week are my abs (the center line can be clearly seen without sucking in my stomach) and my booty is much tighter (Thank You Autumn)! David whipped up some amazing buffalo hummus for our afternoon snack during the Washington Capitals game and I decided to make Italian stuffed peppers for dinner (a family favorite). I was not hungry today but my entire body was sore, thank goodness it was finally Yoga day, I was ready for a good stretch. 01155f61130bf1345ecd7f35cd1a5aeecf8f73b160

  • Two Dippy Eggs (sunny side up for those who are not from Lancaster, PA)
  • Sprouted Whole Wheat Toast
  • Sliced Apple
  • Peanut Butter
  • Pour Over Coffee

Snack 1:

  • Vanilla Shakeology
  • Pineapple
  • Almond Milk

  • Spaghetti Sqaush
  • Shrimp
  • Lime Basil Vinaigrette
  • 1/2 Orange

Snack 2:

Dinner: Italian Stuffed Peppers (See Recipe Section for01854e6b5173e93671eeaec5d9bd13fe768607311f details) are a family favorite and David requested them for Sunday dinner. I love making these because I can prep the peppers in the morning, stick them in the fridge and then pop them in the oven while I am working out. It is also a great way to introduce your family to quinoa! They wont even realize you swapped out the rice in a traditional stuffed pepper.

Workout: Today’s workout was Yoga Fix Extreme, I won’t lie I’m not a huge yoga fan, I loved PiYo, but that was because it was fast paced pilates and yoga combined. I know yoga is very important, and this is a great yoga workout, but I hate stretching (I am a T25 019074a3f276fbb58850c2d42e942401a93a7d133factive stretching kinda girl). Trust me DO NOT skip your yoga workout, being too tight will quickly lead to injury!!!! By the end of the workout I was relaxed, all of my soreness was gone, and i had a few chuckles attempting advanced moves (I almost took out the TV during bird of paradise). I highly recommend previewing the workout before your first attempt so that you can smoothly transition between moves. I love that she gives a modified, an intermediate and an advanced level for each move. Right now I can do most of the moves at the intermediate level. Lexi enjoyed my recreation of the workout in the kitchen, she kept trying to lick the bottom of my foot!

Italian Stuffed Peppers

01854e6b5173e93671eeaec5d9bd13fe768607311fI wasn’t going to blog this recipe, but after posting a picture on my Facebook page, I had such a great response that I decided I had to share this one (please forgive the lack of pretty pictures, I will update the post when I make the next batch). This recipe is made about once per round of 21 day fix in our house. While we like our peppers on the crispier side, you can cover them in foil and cook longer to achieve a nice and soft pepper.

  • 6 Bell Peppers (look for larger, wider peppers)
  • 1.3 Pounds Ground Lean Turkey (93%, I try to find antibiotic and hormone free as well)
  • 3 8oz Cans Tomato Sauce
  • 1 Cup Quinoa, Uncooked
  • 2 Cups Mozzarella Cheese, 2%
  • 2 Tbsp. Dried Parsley
  • 2 tsp Dried Onion Flakes
  • 1 tsp Dried Basil
  • 1/2 tsp Ground Oregano
  • 1/2 tsp Thyme
  • 1 tsp Garlic Powder
  • 1/2 tsp Sea Salt
  • 1/4 tsp Ground Black Pepper

*Note: You could use an Italian seasoning blend but I prefer to make my own.

  1. Preheat oven to 350 degrees Fahrenheit01c64bfa67f30f5c85450f48eef7ab963447e6c4fb
  2. Cook Quinoa according to package (omit any oil indicated in directions)
  3. Combine dried parsley through ground black pepper in a small bowl
  4. Cook turkey until no longer pink, drain fat from turkey, add seasoning and cook an additional minute or until spices become fragrant
  5. Combine quinoa, turkey, 1 cup of cheese, and tomato sauce in a large bowl
  6. Cut tops from bell peppers and stuff with turkey mixture
  7. Place peppers in baking dish and fill bottom of dish with 1/2 inch water, top peppers with remaining cheese (tent dish with foil if you desire a more tender pepper)
  8. Cook for 35 minutes or until cheese browns
  9. Allow to cool for at least 5 minutes before serving

0192e3c4eadb8e85fd797fe407e7cfb41959b6adeaIf you would like to go dairy free, there are some great dairy free/soy free cheeses on the market (my favorite brand so far is Daiya). Just make sure to keep them away from David, because he is a cheese monster and thinks my alternative dairy products are crazy. Interesting fact we learned during marriage, if you go dairy free long enough your body actually becomes semi lactose intolerant….I wasn’t feeding David dairy due to my intolerance and he got really ill after eating pizza…Good news is it can be reversed by incorporating dairy gradually back into your diet. Hence why David enjoys his cheese and snubs his nose at my dairy free!

Day 6 of 21

IMG_7894It’s the weekend!!! I love weekends at home because I get to spend my days cooking in the kitchen and snuggling with my husband and dogs. The weather was terrible on Saturday, 3 inches of snow followed by freezing rain, so I headed to the grocery store early in the morning to avoid all of the people buying milk and eggs. I asked David when he wanted to workout because if I do not set an alarm than we tend to try to skip our workout or talk each other out of it. I was surprised at 10 am when David asked if we could go ahead and knock out Dirty 30 Fix Extreme. That meant my Shakeology would be an amazing and refreshing post workout snack. The dogs were super stir crazy by the evening, I was glad I planned a quicker dinner so that I could play with them outside while the spaghetti squash finished in the oven.

  • 2 Mini Vegetable Egg Cups (the last two of the batch, I am going to make these again for week 3 with some alterations!)
  • Hot Sauce, because in my house everything my husband heats up for me ends up with some hot sauce 🙂
  • PB and Strawberry Oatmeal with a pinch of sea salt

Snack 1: Pina Colada Shakeology

  • 1 Scoop Vanilla Shakeology
  • 1 tsp Pure Coconut Extract
  • 1 Purple Pineapple
  • 10 oz of Water

Lunch: Fajitas 🙂 I got the last serving!! (I swear that never happens)

Snack 2: I got a little off track here when I was baking for my husband…I was supposed to have veggies and hummus but I ended up sneaking a Vegan Berry Muffin (recipe to be posted later tonight). Luckily I forgot to add almond milk to my shake for my third yellow for the day, so I ended up counting that as my yellow, blue, and last purple (not perfect container math, but we all have slip-ups).

IMG_7864Dinner: Spaghetti Squash with Shrimp Marinated in Lime Basil Vinaigrette.

  • Spaghetti Squash (a great pasta substitute when you don’t have a yellow container left for the day)
  • Shrimp (sauteed in a pan with salt and pepper to taste)
  • Lime Basil Vinaigrette from the 21 Day Fix Extreme Book (added to the shrimp for the last minute of cooking)

This dinner was a big hit with my husband, since he didn’t have fajitas for lunch, I served his over whole wheat pasta. By the time I had come downstairs with my plate and drink, a majority of his plate was clean! I keep a list of recipes I cook once per round and this will definitely make the list. It was simple and you could cook the squash while you were working out and then quick saute the shrimp for a great weeknight meal.

Workout: Dirty 30 Extreme consisted of 3 rounds, 2 exercises each round and each exercise lastsIMG_7842 one minute. Most of the moves worked your arms and legs at the same time. For example, the Squat Press is a weighted squat with a press at the top of the squat. I thought my legs would be dead after Lower Fix Extreme and Cardio Fix Extreme, but this workout actually worked out all of the soreness from the past two days. My favorite move was the Lunge Row Curl, it’s a forward lunge with a row at the bottom and then you balance on one leg and curl at the top. I love that the chalk board in the back of the exercise room in the video says “Don’t Stop When You’re Tired, Stop when You’re Done.” Oh and just when you think you are done, Autumn throws in a bonus round move, it’s a Plank Crunch!!!! I really need to work on my balance for this one, I kept falling to the side I had the weight on. This workout made me feel so strong, worked out all the lactic acid built up in my legs and still managed to kick my butt. I am sad that there is only one more new workout to go, but I have loved every one of these workouts so far!

Day 4 of 21

The ever dreaded Lower Fix Extreme Day! Today was my first day back in the office after my snow day and a day of telework. It was so sad when I went to grab my laptop and Zoey was already in the basement wagging her tail and hopping into her normal telework position. But I’m so lucky to have a job that lets me spend more time with my dogs and husband, so I can’t really complain! I’ve upped my container bracket from 21 Day Fix and didn’t realize how much my lunch box would be pushed to the limit. The seams on my lunchbox have split! If anyone has a great suggestion for a larger insulated lunchbox, I would be more than grateful if you commented below. Breakfast, lunch and my two snacks packed, I headed back to work in the office. All of the hunger and crankiness from yesterday was gone; I’m starting to think that was my bodies response to cutting out the sugar from the weekend of binging. While the workout kicked my butt, literally, I loved how strong it made my legs and butt feel, of course I struggled to get up the stairs to make dinner, but I will look forward to this workout next week.

  • Mini Vegetable Egg Cups (see my recipe page)
  • Whole Grain Sprouted Toast
  • One Purple Container of Strawberries

I had a very busy morning back at work filled with meetings and phone conferences. This breakfast kept me full until it was time for my mid-morning snack. I ate it as three smaller meals, since I didn’t have a free time to just sit and eat. During 21 Day Fix Extreme I want to focus on mindful eating. The idea is that if you are watching TV, checking email or having a conversation and not paying attention to what you are tasting than you will feel less satisfied and ultimately less full. Have you ever grabbed a piece of fruit while checking email only to look down and realize you ate the entire piece and feel unsatisfied? That is mindless eating! So when I eat in the office I try to take 5 minutes to really just enjoy what I am eating. It seems to be working, and I find that I really appreciate the sweetness of fruit more than when i was just popping strawberries in my mouth one after another.

Snack 1: Shakeology Bar and an orange. Unfortunately I had to eat this during our morning teleconference, but I was still full from breakfast, so didn’t actually feel the need for a snack like I do on most days.

Lunch: My typical quick clean meal of baked chicken, a sweet potato, and broccoli. I was running way behind when I was packing lunch this morning, the coffee grinder was not cooperating…so I abandoned my more ambitious plan of a loaded sweet potato for a repeat meal. In the past I would have caved and just grabbed Chipotle or Subway out with coworkers but I’m determined to follow this plan for 21 days to see how my abs improve.IMG_7781

Snack 2: Double Berry Shakeology (my bag of strawberry arrived!!!)

  • 1 Scoop Strawberry Shakeology
  • 1 Purple Frozen Raspberries
  • 1/2 tsp Cinnamon
  • 10 Oz of Water
  • 2-4 Ice Cubes

I was super excited that my shake actually fit in my new shaker cup. Apparently I make monster sized shakes, because no one else in my group has this problem….I took my shakeology to my afternoon meeting, and since I was just sitting in for a second opinion I got to sit back and really enjoy it. This recipe by BeachBody is delicious (I added the cinnamon because I am a cinnamon fanatic) and it will be one of my regulars this month.

IMG_7799Dinner: Fajitas!

  • 1 Red of Chicken (cooked with the smokey southwest seasoning)
  • 1 Green of Bell Peppers and Onions (sauteed in 1 tsp extra virgin olive oil and then tossed with the chicken and seasoning)
  • 2 Corn Tortillas (6 inch)
  • 2 Tablespoons hot salsa (Ok, I admit that this is a little break from the book, she calls for pico de gallo…I couldn’t find any at the store that didn’t look gross so I did cheat a little…)
  • Dab of Greek Yogurt mixed with the leftover smokey southwest seasoning

As you can see I had a fajita fan club…I was trying to take a photo of Zoey begging for my fajita and next thing I know she is off that pillow with her face stuck in the fajita. She had a salsa beard, but was quiet satisfied with her piece of stolen chicken….She needs a haircut, bad, so that I can see when she is evilly glaring at my dinner! Fajitas are probably my favorite dinner on 21 Day Fix. I think it is because they remind me of the fajita kits from the grocery store that my mom used to make when I was a kid, especially after softball gaIMG_7792mes when we didn’t get home at our usual time.

Workout: Lower Fix Extreme uses weights and the resistance band with squats, lunges, and jumps to make your legs scream! The workout runs 33:51 including the warm-up and cool-down. There are four rounds, with two exercises that are repeated one time per round. While this workout was extremely demanding, I found Autumn to be very inspiring at just the moment I felt like quitting! Several of the exercises started with squats or lunges with your heavy weights for the first thirty seconds and then switched to the same motion as a jump. I loved this combination of weights and jumps to really get a deep burn in the muscle you were working. It also forced you to focus on keeping your core engaged and work on your form so that when you put down the weights and began the jump you were already using perfect form and reduced risk of injury. I struggled with the Back Lunge – Plyo move, which was a weighted backwards lunge for the first 30 seconds and then a jump from the lunge position, but the girl in IMG_7801the pink sports bras was using an athletic movement with her arms that no one else was using that really helped me to get off the ground from that position. My favorite move was the side lunge into a leg lift, this explosive movement really made my inner thigh (a problem spot for me) burn. By the end of the workout I had burned 268 calories according the my Fitbit Charge HR and was drenched in sweat. Lower Fix Extreme is my favorite leg workout I have tried by Beachbody (my completed programs include: PiYo, T25 (Alpha, Beta and Gamma), P90, and 21 Day Fix). I finished my night with a tsp of peanut butter and made the dogs their own spoon of peanut butter so that I could eat mine in peace. Since they are not on the fix they got to enjoy a lot more than a single tsp between the two of them..although Zoey is starting to pack on a little winter weight and we may need to develop the 21 Day Fix dog version sooner than anticipated!

Valentine’s Day Egg in a Basket

This Valentine’s Day I decided to surprise my husband with a healthy 21 Day Fix approved breakfast. We have been eating a lot of dippy eggs (Eggs Over Easy, for those not from Lancaster, PA) with sprouted toast. After doing some research online, I came across recipes for egg in a basket (a take on the British dish of Toad in a Hole, sausage and egg in a piece of toast or pastry). I though I would adapt the recipes I found with butter to fit my clean eating plan. I added avocado and hot sauce to make up for the lack of butter and think that I may have found a new weekend tradition! A heart shape cookie cutter added a little romantic touch to kick off a weekend of relaxation.

Below is the recipe to make two servings (Each serving is one piece of toast, an egg and avocado), I added two pieces of turkey bacon and half of a grapefruit to make the meal 1 Yellow, 1 Purple, 1 Red and 1 Blue for my 21 Day Fix fans!

  •  2 Eggs
  • 2 Slices Whole Grain Sprouted Bread (or whole grain toast)
  • 1/2 Avocado
  • Salt and Pepper (to taste)
  • Hot Sauce (Mexican or Tabasco)

  1.  Use a small cookie cutter to create a hole in the center of the bread.
  2. Lightly toast bread and cut out piece of bread.
  3. Spray pan lightly with olive oil and heat pan over medium heat and add toasted piece of bread in pan, crack egg into center of cut out toast.
  4. Cover pan and cook until egg yolk is set
  5. Flip toast and cook for an additional 30 seconds or until yolk is cooked to desired firmness.
  6. Mash avocado and spread on toast.
  7. Season with salt and pepper and hot sauce.

I hope you enjoy this recipe as much as we do!
