I can’t wait to see how the family pumpkins turn out this year! I may be more excited for some awesome roasted pumpkin seeds! Stay tuned for recipes ❤️
Today was the day all of my hard work over the past 7 months (my official start of clean eating and BeachBody workouts) was going to pay off! I had gone from a size 14 to an easy size 6, and I was actually looking forward to shopping with my mom and sister for the first time in my life. In the past I could barely fit into clothes at mainstream clothing stores, or if they had my size, the clothes were clearly not designed for someone of my height and weight. I also hated buying shorts, dresses or skirts because my thighs would rub together and be so painful in the heat. But with the help of 21 Day Fix, T25, P90 and PiYo I had lost 35 pounds and sculpted my legs so that I could finally wear a pair of short shorts!!!!
I won’t thoroughly review my workout today because I did a hasty Yoga Fix Extreme in the morning before shopping and really struggled on focusing on the moves. Yes, I was stretched out by the end, and this time I used my own music; but I still really struggled to even get into position for a lot of the moves and the modified move didn’t really push me. I swapped Yoga for Dirty 30 Extreme, because I didn’t have time for a shower in the morning and my husband refuses to workout before 9 am and since he doesn’t “do” Yoga, I figured we could do Dirty 30 together on Sunday.
In addition, it was haircut day for Zoey and I, we were off the salon and groomer respectively for a well deserved trim. If you have seen our photos over the past 13 days she looked like an overgrown muppet and I looked like I was growing a fine mullet….After my breakfast and haircut we headed to King of Prussia for a day of shopping and fun! My sister and mom have been following 21 Day Fix eating and doing at home workouts (21 Day Fix, P90, PiYo and Tai Cheng) and have both toned their bodies and lost weight. In the past shopping would make us all pretty grumpy and we would go out for a terrible meal at the mall, but this time we were inspired and excited by the way clothes were fitting us and went to Bahama Breeze for a healthy meal to keep up our results.
My main goal was to find a dress for formal night on the cruise, I had gone shopping with my best friend and fellow coach Carly a couple of weeks ago for shorts and t-shirts but wanted to wait on my final results to pick a dress. I loved this pink colored one on the left, but agreed that I probably wouldn’t have much use for it outside the cruise. We were having a fun time texting our cousin with some of the more unique finds…yes that dress in the middle is one piece oddly….it is connected in the back! My final choice from the day was the purple dress on the right. I felt it was classic, appropriate for any future friend’s weddings and showed off the progress in my stomach. I was inspired and ready to kick butt on my remaining 8 days of 21 Day Fix Extreme. Here is what I ate during my day out, it wasn’t perfect but I think I did a good job of sticking to the plan as closely as possible:
- 1 Yellow Serving Steel Cut Oats
- 1 Purple Frozen Mixed Berries
- 2 Scrambled Eggs
- Chocolate Shakeology
- Frozen Strawberries
Lunch: After shopping for an hour we headed to Bahama Breeze for lunch, they had so many great fix approved meals, but I opted for one of their fish of the day options. We also started with some delicious Hummus and Vegetables as an appetizer. I ate all of my fish but skipped some of the potatoes to keep my meal to two yellows, two reds and 1 green and 3 tsp.
- Wood Grilled Mahi Mahi with Chimichurri
- Steamed Broccoli
- Mashed Cinnamon Sweet Potatos
- Carrots and Celery and Peppers
Snack 2: I couldn’t find a good healthy snack for the day and was still full from lunch. I opted to skip this meal in order to conserve containers for dinner. We didn’t have a plan so I wanted to leave as many options open as possible.
Dinner: We had so much fun shopping we actually forgot to stop anywhere and make a dinner reservation. By the time we got to the restaurants in the mall, every place had over a two hour wait. We headed to the food court….I was really nervous but when I found a make your own salad place, I knew I would be fine. I loaded my salad up with:
- Spring Mix
- Grilled Chicken (yes over on my reds for the day but I was tired and needed it!)
- Green Peppers
- Oil and Vinegar for Dressing on the side
Overall I would call today a shopping success. We were all able to find what we were looking for at the mall. No one broke down in tears…that’s usually my job…and we actually closed down a store finding mom the perfect bathing suit! I don’t think we have ever shopped that long in our lives. Bonus: I had over 15,000 steps on my fitbit Charge HR by the end of the trip.
Today I had a major breakthrough in starting to see definition in my abs, the past 11 days of clean eating (no cheats!) and intense workouts is really paying off. I had my husband take a quick picture before our workout to show you the progress (see below). I was headed home to do some last minute cruise shopping with my mom and sister, so I knew I had a long car ride home after work. I was fortunate to have a second telework day, so I got to enjoy being home with my husband and dogs and being spoiled rotten; my husband prepares all my food while I am working in the office! We were also able to knock out Cardio Fix Extreme during my lunch break, which may have been a poor choice in hindsight! I had major butt cramps the whole 3 hour drive to my parents house, thanks Autumn!!!!!! In fact my booty and my thighs are where I am seeing major changes, this is huge for me since I usually avoided wearing skirts and dresses on vacation due to thigh rubbing and I don’t think this will be an issue for this vacation. Here we go day 12, don’t gloss over breakfast this is a major discovery of delicious Fix approved fast breakfast.
Breakfast: As I mentioned above, my husband lovingly makes my food when I am home teleworking. I passed him my trusty food journal and waited for my breakfast to be delivered. My eyes almost popped out of my head when I saw my oatmeal, it filled the entire bowl!!! So finally I asked him how much oatmeal was in it, turns out he used two yellows worth of oatmeal, but had discovered the most wonderful and filling meal (great if you know you won’t be able to fit in a morning snack).
- 2 Yellow Servings Oatmeal Prepared with water
- 1 Purple Frozen Mixed Berries (heated in the microwave for one minute and then mixed into oatmeal above)
- 2 Eggs Scrambled with Herbamare (if you haven’t tasted this seasoned sea salt, it is worth a try)
Snack 1: I was so stuffed from breakfast but I wanted the extra energy boost from my Shakeology for my workout. I only made it through half of my shake before sticking it in the freezer for a great post workout snack.
- Vanilla Shakeology
- Frozen Antioxidant Fruit Blend
- 2 tsp Peanut Butter
Lunch: I finished off my Shakeology and had a serving of leftover 21 Day Fix Extreme Shakeology and a delicious ripe Pear (Pears are amazing post workout snacks because the high water content they have makes them very refreshing). I had the cutest beggar during my meal, seriously this puppy melts my heart!
- Buffalo Hummus (homemade by my amazing husband)
- Cherry Tomatoes
Dinner: I am so grateful and blessed that my family is also following the 21 Day Fix nutrition plan. I know when I go home to visit that the meals will follow the plan, the containers will be figured out for me and it will be delicious! It also helps to have my mother and sister to swap recipes with. My mom knew I was craving red meat, so she made this amazing Texas Beef Brisket (she does a lot of fat trimming to make sure the brisket is leaner, it probably isn’t a perfect fit to the plan, but it sure is tasty and worth a little treat).
- Texas Beef Brisket (http://www.foodnetwork.com/recipes/texas-oven-roasted-beef-brisket-recipe.html NOTE: we use half the suggested salt)
- Roasted Vegetables
Workout: Today we fit our workout in over my lunch break. Cardio Fix Extreme is challenging but if you push yourself, you will see amazing results. Every time I felt like quitting, I kept reminding myself, you can do anything for one minute! The workout rounds consist of two one minute exercises followed by 30 seconds of pure cardio without weights. This time the 30 seconds of cardio for each round were a relief! My legs were screaming with all of the weighted one minute moves, and it felt good to stretch them out in the pure cardio sections and get my heart rate going. Our golden Lexi was crazy with all the hopping around and unfortunately had to be crated at about the ten minute mark for everyone’s safety. She kept attacking my hand weights and rolling them into my foot path and jumping at my husband. She looked so sad in her crate, but loved stretching with us during the cool down. Other than a couple of leg shakeouts, I didn’t skip a single second of the workout! I will be honest my legs are so sore I think I am going to need to take a bath and roll them out before Dirty 30 Extreme tomorrow. Also not to brag, ok I’m going to brag…..Look at that center line in my abs! It is really starting to show when I am just standing upright. I haven’t been doing the 10 minute ab fix, due to lack of time but even just the normal Extreme workout schedule with proper eating is giving me great progress in my ab definition.
This post will be pretty short, a lot of leftovers today and Pilates Fix Extreme was one the schedule again. At this point I was really missing my workout partner; David was insistent that he wanted nothing to do with the resistance bands and Pilates. I couldn’t really blame him since it is my least favorite of the workouts, but it is important for building core muscles and I did not want to skip it. So I laced up my shoes and struggled again with the bands, by the end of the workout my core was on fire! Day 10 was a huge breakthrough of cravings for me, today was the first day I didn’t want to grab chocolate from the office candy jar.
- 1/2 Orange
- 2 Hard Boiled Eggs
- Shakeology Bar
- Apple and 1 tsp Peanut Butter
- Italian Stuffed Pepper (see Recipe)
- Vanilla Shakeology blended with Frozen Pineapple
- Baby Carrots
- Curried Pork Tenderloin
- Balsamic Roasted Veggies
Workout: As I mentioned above, today was Pilates Fix Extreme. I still haven’t caved and bought the correct resistance band, so I am using 5 pounds more than the recommended resistance. I did improve this week and only struggled with the moves on my stomach (eg. Superman). Since I had completed T25 beta, I had done these exercises using light weights. So I put down the band and picked up my 3 pound weights to complete the exercises instead. I was finally able to complete the entire workout without cursing out Autumn and her dang resistance band! My biggest issue was my little furry friend Zoey….during the hundreds she started swatting at and then standing on the resistance band. I think it’s the two count breathing in and out that makes her so feisty. During the breaks I would toss her dragon to keep her entertained. After the workout we snuggled up on the couch with Lexi to catch up on Parks and Recreation. My weight has stayed the same, down 3 pounds from week 1. I am pretty happy with those results, I tend to lose a bulk of my weight for the round during the first and third weeks of 21 Day Fix. I am really looking forward to workout out with David again tomorrow.
Today was super exciting for two reasons: my hot pink bathing suit from J Crew arrived three days early, and it was Lower Fix Extreme (I LOVE leg day)! As you can see from my photo above i woke up pretty hungry, in fact I dove into my toast before I remembered to take a photo! I swapped my planned morning and afternoon snack so that my Shakeology would keep my cravings and hunger levels low. Lower Fix Extreme was the workout of the day, and it felt amazing to be back to working out with my husband.
- Whole Grain Sprouted Toast
- Two Scrambled Eggs
- Strawberry Shakeology and Frozen Mixed Berries
- Chicken Balsamic Salad
- Shakeology Bar
Dinner: David cooked dinner tonight; my legs were so shot after the workout that I didn’t think I could stand to make dinner! Thank goodness David’s leg were in good enough shape that he could stand to make dinner while I took a recovery bubble bath. We added extra black beans to the recipe to make it a full yellow container per serving. This is one of the best turkey chili recipes we have made on the fix!
- Chili (Recipe from the 21 Day Fix Extreme Book)
Workout: If you haven’t figured it out yet, today was Lower Fix Extreme!!!! I think this stems from my years as a softball player and track and field thrower (javelin, shot put and discus), but leg workouts have always been my strength. I always had chunky thighs growing up, but the best part about the Beachbody workouts is I finally have the toned legs I have always desired. To be honest they may not look slim to you, but to me they are strong and perfect! I have lost a total of 4 1/2 inches from each of my thighs, since starting my weight loss journey. I can wear skinny jeans and shorts and my thighs don’t get that nasty rash from rubbing anymore. To me that makes the 30 minutes of pain on leg day worth every rep! If you read my last review of lower fix, the exercises are a minute long with 30 seconds of a slow weighted rep followed by jumping from the same position without the weights. Several times I had to shake my legs out during the jumps, but then I was able to finish the 30 seconds of jumping. I was able to make it through the entire workout without pausing or skipping any reps. Our golden loves it when we are jumping during our workouts, she likes to stand up on her hind legs and participate! I tried to put her in a down stay, but she was amped up and wanted to play. By my fitbit HR calculation, we burned 280 calories in 30 minutes, and our turkey chili was well earned.
So anyone that knows me, knows I have a major major sweet tooth! Chocolate may be my biggest downfall while eating healthy, so Chocolate Shakeology was a huge breakthrough for me when I started BeachBody workouts. I bought a bag on a whim with my PiYo and decided hey why not, it’s only a couple of bucks more than the program by itself, and if I hate it I can return it and get my money back! I owe my ability to stick to my eating plan to that chocolate shake every afternoon, so when I saw a recipe for Shakeology Pudding in my extreme book, I knew I had to give it a try!
(This post was Inspired by the 21 Day Fix Extreme found on page 72 in Shakeology recipes section)
- 1 1/2 Scoops Chocolate Shakeology (You could use another whey based protein powder, but I won’t promise it will be as tasty!!)
- 1 Ripe Banana (cut in 1 inch chunks)
- 1 Ripe Avocado
- 1 Cup Unsweetened Almond Milk
- Combine all ingredients in blender and blend until smooth.
- Separate into 4 bowls and cover and refrigerate for one hour (this is the hardest part, allowing the pudding to sit without being tempted to break into the fridge and shovel it down!)
If you have never tried Shakeology before it is a wonderful dense and nutritious meal replacement shake. It is full of fiber and probiotics to keep you full and reduce your cravings for sweets. My favorite benefit of drinking Shakeology daily is it keeps my energy levels up and has helped me to reduce my caffeine dependency! Drinking my daily shake and using 30 minute workouts I have lost over 35 pounds and never felt deprived.
Today was training day at the office, which for me always equates to weight loss, because we only get two scheduled breaks during the day so there is no way I can even try to get off plan! My biggest struggle is that we aren’t even allowed water bottles in the training room, so I had to keep standing in the door to the room sipping water to try to get in my 100 oz for the day! I brought along my Fix Extreme book to do some meal planning over our breaks and found three other people in the office who wanted to do the regular fix program (two had recently started the program) with me! I don’t work in a supportive workplace when it comes to eating healthy (crazy because I live in DC) my coworkers are always bringing in candy, chips and cookies to the office! I’m so excited to have new coworkers and friends I can share recipes with in the office and on Pinterest. My hunger level was low today, since I was having fun getting to know my training group; the day was over before I knew it and I was super motivated for my Upper Fix Extreme.
- 2 Slices of Whole Grain Sprouted Toast
- 2 tsp Peanut Butter
- 2 Hard Boiled Eggs
- 1/2 Orange
- Shakeology Bar
- Italian Stuffed Pepper (I swear these make the BEST leftovers)
- Vanilla Shakeology
- Antioxidant Fruit Blend (Costco)
- 1 tsp Cinnamon
- Curry Rubbed Pork Tenderloin (This was a HUGE flop, going to use the leftovers in salads to not waste it, but very bummed about the new rub I tried)
- Balasamic Roasted Vegetables (best roasted veggies yet! Used the recipe for Balsamic Vinaigrette from the extreme book to marinate them)
Workout: David had a late night makeup class due to the snow last week and I was stuck working out alone….or so I thought….Tonight I had Upper Fix Extreme on my schedule; but after a long day of training and being away from home, the dogs wanted nothing more but to play! First I took them for a quick business walk around the block and then we played fetch and worked on some recall training in the yard. I thought I would be good to go for my workout, so I marinated the veggies and rubbed my pork and threw them in the oven. Lexi and Zoey still had a TON of energy, so I said a little prayer and started my workout hoping they would wrestle while I worked out. Zoey immediately started attacking my resistance band (I was secretly hoping she would destroy it so I could justify buying the correct resistance band for the program :p I am currently using the next step up, which came with my T25.) Then Lexi started trying to run away with my 3 pound weights!!!!! I kept going with my workout regardless of the distractions, but had to continue with my heavy weights for several sets due to a missing three pound weight…..LEXI…..By the end of the workout my arms were jello, but I had successfully conquered the triceps dips and kickbacks! It was a blessing in disguise that the dogs were not cooperating, because it forced me to realize that next week I needed to up my weights to challenge myself! I was also really glad I had cooked dinner beforehand, because removing it from the oven with dead arms was a challenge. I may not have the greatest arms, but I am seeing huge improvements in definition. By the end of dinner both dogs were exhausted and ready for bed! I am super excited for this workout next week and to see how it goes with heavier weights. I hope you are finding these reviews helpful! Let me know if you have specific questions about the program in the comments below.
Day 8 was a very busy day: tons of meetings, lots of work to finish up before training, and David had class late so I knew I was on my own. I was also dreading Plyo Fix Extreme by myself since I struggled so much the previous week. I planned out my meals for the week on Sunday, prepped my food for work, and was determined to kick butt this week in order to be ready for the last of my cruise shopping on Saturday with my mom and sister. Lots of repeats food wise today in order to not to be wasteful and save on my weekly shopping budget by bulk cooking.
- 2 Hard Boiled Eggs
- Sprouted Whole Grain Toast
- Shakeology Bar
- Spaghetti Squash
- Lime Basil Vinaigrette
- Vanilla Shakeology
- Coconut Extract
- Balsamic Glaze
- Pan Grilled Chicken
- Spring Mix
- Red Onion
Workout: Plyo Day!!! Last week I was still recovering from the flu and really struggled with the workout, having to modify a majority of the moves or pause during the 30 second intervals. I had several coughing fits and was worried that the workouts might be above my current level of fitness. Well I’m glad to report I was wrong! I had to workout alone because David had a late night class; I was worried I wouldn’t push myself, but I knew I had to see if I could really do this extreme workout. I didn’t modify a single move, except the bonus round, and I made it through a full 30 seconds of each move. I will admit that I may not have kept pace with Autumn the entire time, but I focused on perfect form and exploding into each jump. I think Plyo went from my least to most favorite extreme workout. I felt so strong and accomplished by the end of the 30 minutes that I was sad to reach the cool down!!! Zoey and Lexi kept me company the whole workout and gave me kisses during the breaks for encouragement. Lexi even brought me all three stuffed dragons in an attempt to kill me during the squat jumps!! Note to self for week 3: hide all the dog toys before attempting Plyo! David caught up on the workout on Tuesday morning and also saw large improvements in his jump height and ability to keep up with Autum. He really liked this workout which makes both of us excited for our next workout challenge: Insanity Max 30!
Day 7 and I am down 3 pounds for my first week! I usually have my biggest drop in weight during my first week of a round of 21 Day Fix and I expect 21 Day Fix Extreme to follow suit. The biggest changes I see in my body after one week are my abs (the center line can be clearly seen without sucking in my stomach) and my booty is much tighter (Thank You Autumn)! David whipped up some amazing buffalo hummus for our afternoon snack during the Washington Capitals game and I decided to make Italian stuffed peppers for dinner (a family favorite). I was not hungry today but my entire body was sore, thank goodness it was finally Yoga day, I was ready for a good stretch.
- Two Dippy Eggs (sunny side up for those who are not from Lancaster, PA)
- Sprouted Whole Wheat Toast
- Sliced Apple
- Peanut Butter
- Pour Over Coffee
- Vanilla Shakeology
- Almond Milk
- Spaghetti Sqaush
- Lime Basil Vinaigrette
- 1/2 Orange
- Buffalo Hummus (http://www.gimmesomeoven.com/buffalo-hummus-recipe/)
- Baby Carrots and Cucumbers
Dinner: Italian Stuffed Peppers (See Recipe Section for details) are a family favorite and David requested them for Sunday dinner. I love making these because I can prep the peppers in the morning, stick them in the fridge and then pop them in the oven while I am working out. It is also a great way to introduce your family to quinoa! They wont even realize you swapped out the rice in a traditional stuffed pepper.
Workout: Today’s workout was Yoga Fix Extreme, I won’t lie I’m not a huge yoga fan, I loved PiYo, but that was because it was fast paced pilates and yoga combined. I know yoga is very important, and this is a great yoga workout, but I hate stretching (I am a T25 active stretching kinda girl). Trust me DO NOT skip your yoga workout, being too tight will quickly lead to injury!!!! By the end of the workout I was relaxed, all of my soreness was gone, and i had a few chuckles attempting advanced moves (I almost took out the TV during bird of paradise). I highly recommend previewing the workout before your first attempt so that you can smoothly transition between moves. I love that she gives a modified, an intermediate and an advanced level for each move. Right now I can do most of the moves at the intermediate level. Lexi enjoyed my recreation of the workout in the kitchen, she kept trying to lick the bottom of my foot!
My friend Angela posted a picture of the most amazing vegan blueberry muffins the other day and I knew I had to give them a try (original recipe at: http://os.care2.com/all/blueberry-chia-muffins-gluten-free-and-vegan#1). I whipped these up in the middle of the ice storm on Saturday, and while they may not have been in my containers for the 21 day fix, I couldn’t resist giving one a try. I made a couple of alterations to the original recipe but nothing to major. Next time I want to make them with dark chocolate chips!
- 2 Cups Old Fashioned Oats
- 2 tsp Baking Powder
- 1/2 tsp Ground Cinnamon
- 1/2 tsp Ground Ginger
- Dash of Nutmeg
- 1/4 Cup Whole Chia Seeds
- 1/4 Cup Maple Syrup
- 2 Ripe Bananas
- 1 tsp Vanilla Extract
- 1 Cup AlmondCoconut Blend
- 1 1/2 Cups Frozen Mixed Berries, Thawed
- Preheat your oven to 375F
- In your blender, purée your oats to turn them into oat flour. Make sure you do not see any whole oats.
- Mix oat flour, baking powder, cinnamon, ginger, nutmeg and chia seeds.
- In blender, purée maple syrup, bananas, vanilla extract, and milk until smooth.
- Mix together the wet and dry ingredients together, gently stir in your thawed berries.
- Place liners in muffin pan, and fill each section 3/4 full (these muffins do not expand as much as regular muffins).
- Bake for 18 minutes, or until a knife comes clean from the center of the muffin.
- Store any leftover muffins in the refrigerator. They will stay good for a week, but they probably won’t survive that long in my house!
If you look closely you will see David and his muffin had two admirers…good news is there is nothing in these muffins that can’t be shared with our puppy friends! While I wouldn’t suggest giving them a whole muffin, a tiny bite was enough to allow David to enjoy his muffin in peace. They were amazing warm but they were even better cold the next day for a quick grab and go breakfast. My 21 day fix container math for these muffins isn’t perfect, but sometimes you need a little cheat that won’t set you back: 2 muffins are 1 Yellow (treat), 1 purple and 1 tsp.
